As Chefs we are directly responsible for paying homage to the classics. We recreate classical flavor pairings every day. We take what has been done and try our best to add our own influence.

IN this portion of the project, each student is responsible for taking the researched classical dish and changing it to become a more healthy option without destroying the origins and flavor profiles associated with the classic. It must be recognizable in all fashions; looks, taste, smell, and classical reference.
